Holiday Fruit Soak

Servings 2 24oz Jars

Ingredients
  

  • 1 Bottle Jamaican Rum (White or Brown)
  • 1 Bottle Port Wine
  • 1 16oz package Holiday Fruit Mix
  • 1 jar Maraschino Cherries
  • 2 cups Walnuts

Instructions
 

  • Start with two 24oz canning jars
  • Scoop two cups of Holiday fruit into the canning jars
  • Add half a jar of Maraschino Cherries to each jar
  • Add 1 cup of walnuts on top of the cherries
  • Evenly distribute the remaining Holiday fruit to each jar
  • Now that we've got all of our fruit and nuts in their jars, fill each jar about 2/3 full of the port wine.
  • Top off the jar with the Jamaican Rum. Be sure to leave at least a half an inch of space at the top of the jar to allow for fruit expansion.
  • Store at room temperature. The marinated fruit should be stored for a minimum of 6 months before use for maximum flavor.

Notes

You can use both jars for cake this year or use just one and save the other jar for next year. The longer the fruit marinates, the softer and more flavorful it will be for your cake recipes. In the Caribbean, many People will store for a year or two before using.
